It's Soup Season!

November is here! Which to me, is really the beginning of Fall! It's now dark before 6 pm, the temps are dropping, and there is nothing better than warm soups for dinner! I hope you enjoy this recipe brought to you by my good friend Hilary! Let us know in the comments if you give it a go, and how it went!


French Onion Soup

4 servings

4 tbsp butter

6 cup thinly sliced onions

1 clove garlic

2 tbsp flour

1/2 cup dry white wine

4 cup stock

1/4 tsp thyme

Salt & pepper to taste

4-8 slices of crusty bread

1/2 cup mozzarella

1/2 gruyere

  1. In a pot melt butter, add onions, stir 30-45 min until soft & brown (may seem like a long time, but this is the most crucial part!)

  2. Add garlic, stir 1 min

  3. Add wine until evaporated

  4. Add flour, stir 1 min

  5. Add stock and herbs, simmer 10 min

  6. Layer cheese on toast and broil, don't let it burn! Place on top of soup once portioned out, serve and ENJOY!
