November is here! Which to me, is really the beginning of Fall! It's now dark before 6 pm, the temps are dropping, and there is nothing better than warm soups for dinner! French Onion Soup
4 servings
4 tbsp butter
6 cup thinly sliced onions
1 clove garlic
2 tbsp flour
1/2 cup dry white wine
4 cup stock
1/4 tsp thyme
Salt & pepper to taste
4-8 slices of crusty bread
1/2 cup mozzarella
1/2 gruyere
In a pot melt butter, add onions, stir 30-45 min until soft & brown (may seem like a long time, but this is the most crucial part!)
Add garlic, stir 1 min
Add wine until evaporated
Add flour, stir 1 min
Add stock and herbs, simmer 10 min
Layer cheese on toast and broil, don't let it burn! Place on top of soup once portioned out, serve and ENJOY!
